Lemon + Curd Rice

 I wanted to have lemon rice but also curd rice altogether. So why not mix them up and make 'em as ONE!

 

INGREDIENTS: 

  • Cumin seeds 
  • Mustard seeds
  • Chana daal
  • Urad daal
  • Oil
  • Curry leaves 
  • Ginger
  • Salt
  • Turmeric
  • Asafoetida
  • Lemon juice
  • Curd / Butter milk
  • Left over rice 

 

Let's get started, shall we? 

  1. Start with heating some oil.
  2. Add in mustard & cumin seeds. Wait till they pop.
  3. Add in both the daal & let it crackle for about 2-3 minutes.
  4. Add in the curry leaves, after they splatter, go with asafoetida.
  5. Now go with that curd then salt & turmeric.
  6. Mix well and let the curd infuse all the flavors within for about 5 minutes. 
  7. Add in the rice & incorporate everything well.
  8. Add in buttermilk if the curd mix is too thick.
  9. Grate some ginger for that fresh flavor.
  10. Drizzle with good amount of lemon juice. 
  11. Cover and let it sit for about 5-7 minutes at low flame.
  12. Additionally, garnish with some beetroot & cucumber to please your eyes.
